Ingredients

  • 1 poblano pepper, seeded and diced
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 12 large eggs, whisked
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 ounces cream cheese, cubed (optional)
  • 6 large flour tortillas
  • 810 ounces shredded cheddar cheese
  • 1 (15-ounce) can black beans, drained and rinsed

Instructions

  1. Cook sausage until browned and cooked through, then set aside.
  2. Sauté onion and poblano in the same skillet, add garlic briefly.
  3. Scramble eggs gently with seasoning and cream cheese if using.
  4. Warm tortillas and layer cheese, beans, eggs, sausage, and vegetables.
  5. Roll burritos tightly and bake at 425°F until heated through.
