Ingredients

- ½ pound ground chicken, turkey, or beef sausage
- 1 poblano pepper, seeded and diced
- ½ cup diced onion
- 2 cloves garlic, minced
- 12 large eggs, whisked
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 ounces cream cheese, cubed (optional)
- 6 large flour tortillas
- 8–10 ounces shredded cheddar cheese
- 1 (15-ounce) can black beans, drained and rinsed
Instructions
- Cook sausage until browned and cooked through, then set aside.
- Sauté onion and poblano in the same skillet, add garlic briefly.
- Scramble eggs gently with seasoning and cream cheese if using.
- Warm tortillas and layer cheese, beans, eggs, sausage, and vegetables.
- Roll burritos tightly and bake at 425°F until heated through.
