Description

A cozy Mediterranean-inspired beef stew infused with lemon, fresh herbs, and slow-cooked tenderness. Served over basmati rice with creamy cheese and mint.


Ingredients

  • 2 1/2 pounds beef chuck, trimmed and cut into 1 1/2-inch cubes
  • Salt and black pepper, to taste
  • 3 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 2 tablespoons lemon zest
  • 3 tablespoons fresh lemon juice
  • 4 cups low-sodium beef broth
  • 1 (14-ounce) can diced tomatoes
  • 1 (15-ounce) can white beans, drained and rinsed
  • 3 cups baby spinach
  • 3/4 cup fresh cilantro, chopped
  • 3/4 cup fresh parsley, chopped
  • 1/3 cup fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • 3 cups cooked basmati rice
  • Crumbled feta-style cheese or soft goat-style cheese
  • Fresh mint leaves

Instructions

  1. Season the beef generously with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches until deeply seared on all sides. Transfer the beef to a slow cooker.
  2. Add the chopped onion, garlic, turmeric, crushed red pepper flakes, lemon zest, lemon juice, diced tomatoes, and beef broth to the slow cooker. Lightly season with salt and pepper and stir to combine.
  3. Cover and cook on LOW for 6 to 8 hours, or until the beef is fork-tender and the flavors are well developed.
  4. During the last 45 minutes of cooking, stir in the white beans, spinach, cilantro, parsley, dill, and chives. Taste and adjust seasoning as needed.
  5. Divide the cooked rice among bowls and ladle the hot stew over the top. Finish with crumbled cheese and fresh mint leaves before serving.
