Description

A fresh Mediterranean dinner with tender shrimp cooked in garlic butter and lemon, served with a crisp Greek salad and extra feta.


Ingredients

  • 1 large English cucumber, sliced and quartered
  • 1 cup cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/2 cup pitted Kalamata olives
  • 3/4 cup crumbled feta cheese, plus more for topping
  • Greek Dressing
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoons red vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon-style mustard
  • Salt, to taste
  • Black pepper, to taste
  • Lemon Garlic Shrimp
  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons butter or ghee, melted
  • 1 to 2 garlic cloves, finely minced
  • Salt, to taste
  • Black pepper, to taste
  • Juice of 1/2 to 1 fresh lemon
  • Fresh parsley, finely chopped

Instructions

  1. Add cucumber, tomatoes, red onion, olives, and feta to a large bowl.
  2. Whisk olive oil, red vinegar, oregano, mustard, salt, and pepper in a small bowl.
  3. Pour dressing over salad and toss gently. Set aside.
  4. Mix melted butter with minced garlic.
  5. Toss shrimp with garlic butter, salt, and pepper.
  6. Heat a skillet over medium heat and add shrimp.
  7. Cook 2 to 3 minutes per side until pink and opaque.
  8. Remove from heat, squeeze lemon juice over shrimp, and sprinkle with parsley.
  9. Serve shrimp with salad and finish with extra feta.
