- 1 large English cucumber, sliced and quartered
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced red onion
- 1/2 cup pitted Kalamata olives
- 3/4 cup crumbled feta cheese, plus more for topping
- Greek Dressing
- 1/4 cup extra-virgin olive oil
- 1 1/2 tablespoons red vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon-style mustard
- Salt, to taste
- Black pepper, to taste
- Lemon Garlic Shrimp
- 1 pound raw shrimp, peeled and deveined
- 2 tablespoons butter or ghee, melted
- 1 to 2 garlic cloves, finely minced
- Salt, to taste
- Black pepper, to taste
- Juice of 1/2 to 1 fresh lemon
- Fresh parsley, finely chopped
Instructions
- Add cucumber, tomatoes, red onion, olives, and feta to a large bowl.
- Whisk olive oil, red vinegar, oregano, mustard, salt, and pepper in a small bowl.
- Pour dressing over salad and toss gently. Set aside.
- Mix melted butter with minced garlic.
- Toss shrimp with garlic butter, salt, and pepper.
- Heat a skillet over medium heat and add shrimp.
- Cook 2 to 3 minutes per side until pink and opaque.
- Remove from heat, squeeze lemon juice over shrimp, and sprinkle with parsley.
- Serve shrimp with salad and finish with extra feta.
