Ingredients

Scale
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup whole milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons finely grated lemon zest
  • 1 pinch salt
  • 4 tablespoons unsalted butter
  • Confectioners’ sugar
  • 1/4 cup lemon curd
  • 1 cup fresh strawberries, sliced
  • 1/2 pint fresh blueberries

Instructions

  1. Preheat oven to 425°F and heat skillet.
  2. Blend batter ingredients until smooth.
  3. Melt butter in hot skillet.
  4. Pour batter into skillet and bake 20 minutes.
  5. Lower oven to 300°F and bake 5 minutes more.
  6. Serve immediately with toppings.
