- 4 fillets Tilapia
- 2 tablespoons Unsalted butter
- 3 tablespoons Fresh lemon juice
- 2 cloves Garlic, minced
- to taste Salt and black pepper
- 1 medium Zucchini, sliced
- 1 cup Cherry tomatoes
- 1 medium Bell pepper
- to taste Fresh parsley, chopped
- 1 tablespoon Olive oil
Instructions
- Pat tilapia fillets dry with paper towels and season with salt and pepper.
- In a skillet, melt butter and sauté minced garlic until fragrant.
- Add lemon juice to the skillet and let simmer for 30 seconds.
- Cook tilapia fillets in the skillet for 3-4 minutes on each side until flaky.
- In another pan, heat olive oil and sauté zucchini, bell pepper, and cherry tomatoes until tender.
- Plate the veggies, top with tilapia, and drizzle with lemon butter sauce. Garnish with parsley.
