- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon active dry yeast
- 1 tablespoon ground cinnamon
- 1 cup raisins
- 1–2 teaspoons fresh orange zest
- 1 1/2 cups lukewarm water (105°F–115°F)
- 2 tablespoons brown sugar
Instructions
- In a large bowl, stir together the flour, salt, yeast, cinnamon, raisins, and orange zest until evenly combined.
- Pour in the lukewarm water and mix with a spoon or spatula until a sticky, shaggy dough forms. No kneading is required.
- Cover the bowl tightly with plastic wrap and leave it at room temperature for 12–18 hours, allowing the dough to rise slowly.
- Place your Dutch oven in the oven and preheat to 450°F so the pot becomes fully heated.
- Lightly flour your hands and dust the dough. Transfer it to a floured surface, flatten gently, and sprinkle the brown sugar on top. Fold the dough several times to distribute the sugar, then shape it into a round ball. Set it onto a piece of parchment paper.
- Carefully remove the hot Dutch oven from the oven. Lower the parchment with the dough into the pot, cover with the lid, and bake for 30 minutes. Remove the lid and bake another 15–20 minutes until the crust is deeply golden.
- Transfer the loaf to a cooling rack and allow it to cool completely for the best texture.
