Ingredients

  • 1/4 cup Granulated sugar
  • 1/4 cup Brown sugar
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1 large Large egg
  • 1 tsp Vanilla extract
  • 1 cup Your favorite fruit jam

Instructions

  1. Cream Butter and Sugars: In a large bowl, beat room-temperature butter with granulated and brown sugar until light and fluffy, about 3 minutes using a hand mixer on medium speed.
  2. Mix in Egg & Vanilla: Add the egg and vanilla extract to the creamed mixture, beating just until incorporated and smooth.
  3. Whisk Dry Ingredients: In another medium bowl, whisk together all-purpose flour, baking powder, and salt until well blended.
  4. Form the Base: Gradually fold dry ingredients into wet mixture until crumbly; press half into a greased 8×8-inch pan for an even base.
  5. Spread the Jam: Spoon your favorite fruit jam over the chilled base, gently smoothing into an even layer.
  6. Add Crumb Topping: Sprinkle remaining dough crumbs evenly on top.
  7. Bake: Place pan in preheated 350°F oven; bake 25–30 minutes or until topping is golden brown.
  8. Cool & Slice: Allow bars to cool completely in the pan, about 1 hour; lift from pan and cut into neat squares.
