Description

This Spicy Thai Peanut Chicken Stir Fry features tender chicken and crisp veggies coated in a luscious peanut sauce, making it an irresistible dish.


Ingredients

  • 4 pieces Boneless chicken breasts or thighs
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fresh lime juice
  • 3 cloves Garlic cloves
  • 1 tablespoon Grated ginger
  • 1 cup Creamy peanut butter
  • 2 tablespoons Red curry paste
  • 1 cup Coconut milk
  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown sugar or honey
  • 1 tablespoon Rice vinegar
  • 2 cups Bell peppers
  • 1 cup Snap peas or green beans
  • 1 cup Carrots
  • 1/2 cup Chopped peanuts
  • 1/4 cup Fresh cilantro
  • 1 whole Lime wedges

Instructions

  1. In a bowl, whisk soy sauce, lime juice, garlic, and ginger. Add chicken and toss to coat evenly. Let rest for 15 minutes.
  2. In a small bowl, stir creamy peanut butter, red curry paste, coconut milk, soy sauce, brown sugar, and rice vinegar until smooth and velvety.
  3. Preheat a large wok or skillet over medium-high heat for about 2 minutes, adding oil once it shimmers slightly.
  4. Add marinated chicken in a single layer. Sear for 4–5 minutes, turning once, until golden-brown and cooked through.
  5. Push chicken aside; add bell peppers, snap peas, and carrots. Stir-fry for 3 minutes until tender-crisp.
  6. Pour peanut sauce over chicken and veggies. Stir continuously for 2 minutes until sauce bubbles and thickens.
  7. Transfer to a platter, sprinkle with chopped peanuts and fresh cilantro, and serve with lime wedges.
