- 4 pieces Boneless chicken breasts or thighs
- 3 tablespoons Soy sauce
- 2 tablespoons Fresh lime juice
- 3 cloves Garlic cloves
- 1 tablespoon Grated ginger
- 1 cup Creamy peanut butter
- 2 tablespoons Red curry paste
- 1 cup Coconut milk
- 2 tablespoons Soy sauce
- 1 tablespoon Brown sugar or honey
- 1 tablespoon Rice vinegar
- 2 cups Bell peppers
- 1 cup Snap peas or green beans
- 1 cup Carrots
- 1/2 cup Chopped peanuts
- 1/4 cup Fresh cilantro
- 1 whole Lime wedges
Instructions
- In a bowl, whisk soy sauce, lime juice, garlic, and ginger. Add chicken and toss to coat evenly. Let rest for 15 minutes.
- In a small bowl, stir creamy peanut butter, red curry paste, coconut milk, soy sauce, brown sugar, and rice vinegar until smooth and velvety.
- Preheat a large wok or skillet over medium-high heat for about 2 minutes, adding oil once it shimmers slightly.
- Add marinated chicken in a single layer. Sear for 4–5 minutes, turning once, until golden-brown and cooked through.
- Push chicken aside; add bell peppers, snap peas, and carrots. Stir-fry for 3 minutes until tender-crisp.
- Pour peanut sauce over chicken and veggies. Stir continuously for 2 minutes until sauce bubbles and thickens.
- Transfer to a platter, sprinkle with chopped peanuts and fresh cilantro, and serve with lime wedges.
