  • 2 pounds sweet potatoes, peeled and quartered
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • For the Topping:
  • 1 cup chopped pecans
  • 1 cup mini marshmallows
  • 2 tablespoons melted butter
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the quartered sweet potatoes in water until tender, about 15-20 minutes. Drain well.
  3. Transfer the cooked sweet potatoes to a large bowl and mash them until smooth.
  4. Add the softened butter, granulated sugar, milk, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until well combined and creamy.
  5. Pour the sweet potato mixture into a 9×13 inch baking dish.
  6. In a separate bowl, combine the chopped pecans, mini marshmallows, melted butter, and brown sugar for the topping.
  7. Spread the pecan and marshmallow topping evenly over the sweet potato mixture.
  8. Bake for 25-30 minutes, or until the casserole is heated through and the topping is golden brown and bubbly.

Notes
