  • 2 cups Okonomiyaki flour mix
  • 1 1/4 cups Dashi or water
  • 2 large eggs
  • 1/2 lb Pork belly slices or bacon, thinly sliced
  • 1 cup Shredded cabbage
  • 1/4 cup Chopped green onions
  • 1/4 cup Tenkasu (tempura scraps)
  • Optional: 1/4 cup Sakura denbu (sweet, dried shredded fish)
  • Okonomiyaki sauce
  • Japanese mayonnaise
  • Katsuobushi (bonito flakes)
  • Aonori (dried seaweed flakes)

Instructions

  1. In a large bowl, whisk together the Okonomiyaki flour mix and Dashi or water until smooth.
  2. Stir in the eggs, shredded cabbage, chopped green onions, and tenkasu. If using, add sakura denbu. Mix gently until just combined. Do not overmix. This is your savory okonomiyaki batter.
  3. Heat a lightly oiled griddle or large frying pan over medium heat.
  4. Pour half of the batter onto the griddle to form a circle about 8 inches in diameter.
  5. Arrange half of the pork belly slices or bacon on top of the batter.
  6. Cook for about 5-7 minutes, or until the bottom is golden brown and the pork is cooked through.
  7. Carefully flip the okonomiyaki using a spatula.
  8. Cook the other side for another 5-7 minutes until golden brown and the pork is crispy.
  9. Brush the top generously with Okonomiyaki sauce and drizzle with Japanese mayonnaise.
  10. Sprinkle with katsuobushi and aonori.
  11. Repeat with the remaining batter and pork for a second Irresistible Okonomiyaki.
