- 1 1/4 cups Dashi or water
- 2 large eggs
- 1/2 lb Pork belly slices or bacon, thinly sliced
- 1 cup Shredded cabbage
- 1/4 cup Chopped green onions
- 1/4 cup Tenkasu (tempura scraps)
- Optional: 1/4 cup Sakura denbu (sweet, dried shredded fish)
- Okonomiyaki sauce
- Japanese mayonnaise
- Katsuobushi (bonito flakes)
- Aonori (dried seaweed flakes)
Instructions
- In a large bowl, whisk together the Okonomiyaki flour mix and Dashi or water until smooth.
- Stir in the eggs, shredded cabbage, chopped green onions, and tenkasu. If using, add sakura denbu. Mix gently until just combined. Do not overmix. This is your savory okonomiyaki batter.
- Heat a lightly oiled griddle or large frying pan over medium heat.
- Pour half of the batter onto the griddle to form a circle about 8 inches in diameter.
- Arrange half of the pork belly slices or bacon on top of the batter.
- Cook for about 5-7 minutes, or until the bottom is golden brown and the pork is cooked through.
- Carefully flip the okonomiyaki using a spatula.
- Cook the other side for another 5-7 minutes until golden brown and the pork is crispy.
- Brush the top generously with Okonomiyaki sauce and drizzle with Japanese mayonnaise.
- Sprinkle with katsuobushi and aonori.
- Repeat with the remaining batter and pork for a second Irresistible Okonomiyaki.
