Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar, plus more for topping
  • 5 large egg yolks

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  3. In a separate bowl, whisk together the sugar and egg yolks until pale and slightly thickened.
  4. Gradually whisk the hot cream into the egg yolk mixture until well combined.
