Ingredients
Scale
- 1 pre-baked 9-inch pie crust
- 2 cups heavy cream
- 1/2 cup granulated sugar, plus more for topping
- 5 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 325°F (160°C).
- In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
- In a separate bowl, whisk together the sugar and egg yolks until pale and slightly thickened.
- Gradually whisk the hot cream into the egg yolk mixture until well combined.
- Stir in the vanilla extract and salt.
- Pour the custard mixture into the pre-baked pie crust.
- Bake for 40-50 minutes, or until the custard is set but still has a slight jiggle in the center.
- Remove from oven and let cool completely on a wire rack.
- Once cooled, sprinkle a thin, even layer of sugar over the top of the custard.
- Using a kitchen torch, caramelize the sugar until golden brown and bubbly. Alternatively, you can broil the pie for a minute or two, watching very carefully to prevent burning.
- Chill the creamy creme brulee pie for at least 2 hours before serving.
Notes
- For an extra creamy custard, ensure you don’t overcook the pie.
- Experiment with flavor variations by adding chocolate or fruit purees to the custard base.
- Allow the caramelized sugar to set for a few minutes before serving for the best crackle.
