Instructions

  1. Blanch broccoli: In a pot of boiling salted water, cook broccoli florets for 2 minutes until bright green and just tender. Immediately drain and plunge into ice water to stop cooking.
  2. Mix Sauce: In a small bowl, whisk honey, Dijon mustard, soy sauce, and rice vinegar until smooth. Stir in a cornstarch slurry to create a glossy, clingy sauce that coats the beef.
  3. Heat Oil: Warm sesame oil in a large skillet or wok over medium-high heat until shimmering, about 1 minute.
  4. Sear Beef: Add thinly sliced sirloin in a single layer; cook undisturbed for 2–3 minutes until edges brown. Flip pieces and cook another 1–2 minutes until just cooked through and tender.
