- 1 cup long-grain white rice (rinsed)

Instructions
- Rinse rice: Place long-grain rice in a fine-mesh strainer and rinse under cold water until it runs clear.
- Cook rice: In a medium saucepan, combine rinsed rice, broth (or water), and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for 18 minutes.
- Season chicken: Pat chicken thighs dry with paper towels, then season generously on both sides with salt and black pepper.
- Brown chicken: Melt butter in a large skillet over medium-high heat. Add chicken pieces and brown on both sides until golden brown, about 4 minutes per side.
- Sauté aromatics: Reduce heat to medium, add chopped onion and minced garlic to the skillet. Sauté until onions are translucent and garlic is fragrant, about 3 minutes.
- Make roux: Sprinkle flour over the aromatics in the skillet, stirring constantly until it forms a smooth paste, about 1 minute.
- Add broth: Gradually whisk in chicken broth, scraping up any browned bits from the pan. Bring to a gentle simmer and cook until thickened, about 5 minutes.
- Simmer chicken: Nestle browned chicken back into the thickened gravy, cover the skillet, reduce heat to low, and simmer until chicken is tender and cooked through, about 15 minutes.
