  • 1 cup red bell peppers, diced
  • 1 medium onion, yellow or red preferred
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes, optional

Instructions

  1. Marinate Beef: Combine ground beef, soy sauce, minced garlic, Worcestershire sauce, and cracked black pepper in a bowl. Stir well and let sit for 10 minutes.
  2. Heat Skillet: Preheat a large, oven-safe skillet over medium-high heat. Add olive oil and swirl until shimmering, about 2 minutes.
  3. Sear Beef: Add the marinated beef to the hot skillet. Break into chunks and cook for 5–7 minutes until browned and cooked through.
  4. Toss Vegetables: In a bowl, combine sliced carrots, halved Brussels sprouts, diced red peppers, and onion with olive oil, fresh thyme, and salt until coated.
  5. Roast in Oven: Transfer the skillet to a 400°F oven and roast for 15–20 minutes until vegetables are tender and slightly golden.
  6. Finish & Serve: Remove skillet from oven, sprinkle red pepper flakes, adjust seasoning with salt, garnish with thyme, and serve hot.
