- 4 large Flour tortillas
- 2 cups Fresh spinach or mixed greens

Instructions
- Preheat grill: Heat your grill or grill pan to medium-high (around 400°F).
- Prep vegetables: Slice red peppers, zucchini, and red onion into strips, then toss with olive oil, salt, and pepper until evenly coated.
- Grill veggies: Place vegetables on the hot grill rack, cooking for about 4–5 minutes per side until tender with golden char edges.
- Rest and slice: Transfer veggies to a plate to rest, let cool for 2 minutes, then chop into bite-sized pieces.
- Blend hummus: In a bowl, combine plain hummus with lemon juice, garlic powder, and a pinch of salt, stirring until creamy.
- Warm tortillas: Briefly heat tortillas on the grill or skillet over medium heat for about 20 seconds per side.
- Layer fillings: Spread a generous layer of hummus over each tortilla, then top with grilled veggies, fresh spinach, and sprinkle feta cheese if desired.
- Roll and serve: Fold in the sides and roll tightly, slice in half, and enjoy immediately while warm or pack for a picnic treat.
