Ingredients

  • 1 piece Zucchini

  • 2 tablespoons Olive oil

  • 2 tablespoons Lemon juice

  • 4 large Flour tortillas
  • 2 cups Fresh spinach or mixed greens
  • 1 cup Feta cheese (optional)

Instructions

  1. Preheat grill: Heat your grill or grill pan to medium-high (around 400°F).
  2. Prep vegetables: Slice red peppers, zucchini, and red onion into strips, then toss with olive oil, salt, and pepper until evenly coated.
  3. Grill veggies: Place vegetables on the hot grill rack, cooking for about 4–5 minutes per side until tender with golden char edges.
  4. Rest and slice: Transfer veggies to a plate to rest, let cool for 2 minutes, then chop into bite-sized pieces.
  5. Blend hummus: In a bowl, combine plain hummus with lemon juice, garlic powder, and a pinch of salt, stirring until creamy.
