- 1 large head of cauliflower
- 1/4 cup extra-virgin olive oil
- 4–5 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, freshly ground
- Optional: Red pepper flakes to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Remove outer leaves of cauliflower. Trim the bottom of the stem, leaving the core intact.
- Slice the cauliflower vertically into four thick steaks, about 1 to 1.5 inches thick.
- In a small bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, pepper, and red pepper flakes (if using).
- Brush both sides of the cauliflower steaks and any loose florets generously with the garlic herb mixture.
- Place steaks and florets in a single layer on the prepared baking sheet.
- Roast for 15-20 minutes, then flip the steaks.
- Continue roasting for another 10-15 minutes, or until golden brown and tender.
- Serve immediately.

- For best results, use a large, dense head of cauliflower.
- Do not overcrowd the baking sheet to ensure proper browning.
