  • 1 large head of cauliflower
  • 1/4 cup extra-virgin olive oil
  • 45 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper, freshly ground
  • Optional: Red pepper flakes to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove outer leaves of cauliflower. Trim the bottom of the stem, leaving the core intact.
  3. Slice the cauliflower vertically into four thick steaks, about 1 to 1.5 inches thick.
  4. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, paprika, salt, pepper, and red pepper flakes (if using).
  5. Brush both sides of the cauliflower steaks and any loose florets generously with the garlic herb mixture.
  6. Place steaks and florets in a single layer on the prepared baking sheet.
  7. Roast for 15-20 minutes, then flip the steaks.
  8. Continue roasting for another 10-15 minutes, or until golden brown and tender.
  9. Serve immediately.
