Curried Chicken Thigh Sandwich with Jalapeño Lime Slaw & Honey Mint Yogurt


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 teaspoons curry powder, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • 1½ cups plain Greek yogurt, divided
  • 2 cups green cabbage, sliced
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1 fresh jalapeño, sliced
  • ½ cup Greek yogurt
  • 2 tablespoons honey
  • 2 tablespoons fresh mint, chopped
  • 2 cups all-purpose flour
  • Vegetable oil, for frying
  • 4 sandwich rolls
  • 4 tablespoons butter
  • 2 cloves garlic, minced

Instructions

  1. Mix spices, lime juice, and yogurt. Marinate chicken 30 minutes.
  2. Combine slaw ingredients and season.
  3. Mix yogurt, honey, and mint.
  4. Dredge chicken in seasoned flour.
  5. Shallow fry until golden and cooked through.
  6. Toast garlic bread.
  7. Assemble sandwiches with sauce, slaw, and chicken.
