- 2 teaspoons curry powder, divided
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and black pepper, to taste
- Juice of 1 lime
- 1½ cups plain Greek yogurt, divided
- 2 cups green cabbage, sliced
- 1 cup red cabbage, shredded
- 1 cup carrots, shredded
- 1 fresh jalapeño, sliced
- ½ cup Greek yogurt
- 2 tablespoons honey
- 2 tablespoons fresh mint, chopped
- 2 cups all-purpose flour
- Vegetable oil, for frying
- 4 sandwich rolls
- 4 tablespoons butter
- 2 cloves garlic, minced
Instructions
- Mix spices, lime juice, and yogurt. Marinate chicken 30 minutes.
- Combine slaw ingredients and season.
- Mix yogurt, honey, and mint.
- Dredge chicken in seasoned flour.
- Shallow fry until golden and cooked through.
- Toast garlic bread.
- Assemble sandwiches with sauce, slaw, and chicken.
