Description
Easy Crusty Spelt Rolls with a golden crisp crust and tender interior. Made with wholesome spelt flour and an overnight rise for deep flavor.
Ingredients

- 1 3/8 cups warm water
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon honey
- 4 cups spelt flour
- 1 1/2 teaspoons salt
- 2 cups spelt flakes
Instructions
- In a large mixing bowl, combine the warm water, yeast, and honey. Let it sit for a minute to dissolve. Add the spelt flour, salt, and spelt flakes. Stir until a soft dough forms and no dry flour remains.
- Knead the dough by hand or with a stand mixer for about 5 minutes, until smooth and elastic.
- Cover the bowl tightly and refrigerate overnight.
- Remove the dough from the refrigerator and divide it into 10 equal pieces. Shape into smooth balls and place on a parchment-lined baking sheet.
- Cover loosely and let rest at room temperature for 20 minutes.
- Preheat oven to 480°F. Place a heat-safe dish with water on the bottom rack.
- Place rolls in oven, reduce temperature to 435°F, and bake for 30 minutes until golden brown and crisp.
- Cool slightly before serving.
