Description

Easy Crusty Spelt Rolls with a golden crisp crust and tender interior. Made with wholesome spelt flour and an overnight rise for deep flavor.


Ingredients

  • 1 3/8 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon honey
  • 4 cups spelt flour
  • 1 1/2 teaspoons salt
  • 2 cups spelt flakes

Instructions

  1. In a large mixing bowl, combine the warm water, yeast, and honey. Let it sit for a minute to dissolve. Add the spelt flour, salt, and spelt flakes. Stir until a soft dough forms and no dry flour remains.
  2. Knead the dough by hand or with a stand mixer for about 5 minutes, until smooth and elastic.
  3. Cover the bowl tightly and refrigerate overnight.
  4. Remove the dough from the refrigerator and divide it into 10 equal pieces. Shape into smooth balls and place on a parchment-lined baking sheet.
  5. Cover loosely and let rest at room temperature for 20 minutes.
  6. Preheat oven to 480°F. Place a heat-safe dish with water on the bottom rack.
  7. Place rolls in oven, reduce temperature to 435°F, and bake for 30 minutes until golden brown and crisp.
  8. Cool slightly before serving.
