- 1 lb Ground pork
- 1 cup Carrots, finely shredded
- 1 bunch Green onions, thinly sliced
- 4 cloves Garlic, minced
- 1 medium Onion, chopped finely
- 3 tbls Soy sauce
- to taste Salt and pepper
- 20 Lumpia wrappers
- 3 cups Vegetable oil
- 1 cup Water chestnuts, diced
- 1 cup Shrimp, chopped
- 1 cup Cabbage, finely shredded
Instructions
- In a skillet over medium heat, cook ground pork until no pink remains, about 5 minutes, breaking it into fine crumbles.
- Add garlic and onion to the skillet; cook over medium heat for 2–3 minutes until fragrant and translucent, stirring constantly to prevent sticking or burning.
- Stir in shredded carrots, green onions, soy sauce, salt, and pepper. Cook 2–3 minutes until veggies soften but retain a slight crunch.
- Lay one lumpia wrapper on a clean surface. Spoon 2 tablespoons of filling near one edge, fold the bottom corner tightly over, tuck in sides, and roll to seal with a dab of water.
- Pour vegetable oil into a large skillet, about ⅓ inch deep. Heat over medium-high until a small wrapper corner sizzles immediately, approximately 1–2 minutes.
- Carefully add rolled lumpia in batches, frying each side for 2–3 minutes until golden brown. Transfer to a paper towel-lined plate to drain excess oil and stay crisp.
