Instructions
- Slice the eggplant into ½-inch rounds.
- Salt both sides of the eggplant slices and let them sit for 30–60 minutes to draw out moisture.
- Blot the eggplant slices dry thoroughly with paper towels.
- Preheat your oven and a baking sheet to 425°F (218°C).
- Set up a breading station with three bowls: one with all-purpose flour, one with beaten eggs and milk (egg wash), and one with panko breadcrumbs, grated parmesan, garlic powder, and Italian seasoning.
- Dredge each eggplant slice first in the flour, ensuring it’s lightly coated.
- Dip the floured slice into the egg wash, letting any excess drip off.
- Press the egg-washed slice into the panko-parmesan mixture, coating both sides evenly.
- Arrange the coated eggplant slices in a single layer on the preheated, lightly oiled baking sheet. Ensure there’s space between slices for even cooking.
- Bake for 15–18 minutes, then flip the slices.
- Bake for another 10–12 minutes, or until both sides are golden brown and crispy.
- For extra crispiness, you can broil for 1–2 minutes at the end, watching carefully to prevent burning.
- Serve the crispy baked eggplant hot with marinara sauce or garlic yogurt dip.
