Instructions

  1. Slice the eggplant into ½-inch rounds.
  2. Salt both sides of the eggplant slices and let them sit for 30–60 minutes to draw out moisture.
  3. Blot the eggplant slices dry thoroughly with paper towels.
  4. Preheat your oven and a baking sheet to 425°F (218°C).
  5. Set up a breading station with three bowls: one with all-purpose flour, one with beaten eggs and milk (egg wash), and one with panko breadcrumbs, grated parmesan, garlic powder, and Italian seasoning.
  6. Dredge each eggplant slice first in the flour, ensuring it’s lightly coated.
  7. Dip the floured slice into the egg wash, letting any excess drip off.
  8. Press the egg-washed slice into the panko-parmesan mixture, coating both sides evenly.
