- 1 large head of cauliflower (about 2 lbs), cut into bite-sized florets
- 1 cup all-purpose flour
- 1 cup milk (or unsweetened plant-based milk)
- 2 large eggs
- 1 ½ cups Panko breadcrumbs
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- Olive oil spray or cooking spray
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Wash and thoroughly dry the cauliflower florets. Cut into uniform, bite-sized pieces (about 1-1.5 inches).
- Set up a three-bowl breading station: Bowl 1 with flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Bowl 2 with whisked eggs and milk. Bowl 3 with Panko breadcrumbs.
- Create a thin batter by gradually whisking the dry ingredients from Bowl 1 into the wet ingredients in Bowl 2 until smooth.
- Dip each cauliflower floret into the batter, letting excess drip off, then coat thoroughly in the Panko breadcrumbs, pressing gently to adhere.
- Arrange the breaded cauliflower bites in a single layer on the prepared baking sheet, ensuring they have space between them. Use a second baking sheet if necessary.
- Lightly spray the tops of the cauliflower bites with cooking spray.
- Bake for 15 minutes. Flip each bite and bake for another 10-15 minutes, or until golden brown and crispy.
- Serve immediately with your favorite dipping sauces.

- Ensure cauliflower is very dry before breading for maximum crispiness.
