  • 1 large head of cauliflower (about 2 lbs), cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup milk (or unsweetened plant-based milk)
  • 2 large eggs
  • 1 ½ cups Panko breadcrumbs
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Olive oil spray or cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash and thoroughly dry the cauliflower florets. Cut into uniform, bite-sized pieces (about 1-1.5 inches).
  3. Set up a three-bowl breading station: Bowl 1 with flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Bowl 2 with whisked eggs and milk. Bowl 3 with Panko breadcrumbs.
  4. Create a thin batter by gradually whisking the dry ingredients from Bowl 1 into the wet ingredients in Bowl 2 until smooth.
  5. Dip each cauliflower floret into the batter, letting excess drip off, then coat thoroughly in the Panko breadcrumbs, pressing gently to adhere.
  6. Arrange the breaded cauliflower bites in a single layer on the prepared baking sheet, ensuring they have space between them. Use a second baking sheet if necessary.
  7. Lightly spray the tops of the cauliflower bites with cooking spray.
  8. Bake for 15 minutes. Flip each bite and bake for another 10-15 minutes, or until golden brown and crispy.
  9. Serve immediately with your favorite dipping sauces.

  • Ensure cauliflower is very dry before breading for maximum crispiness.
