Crispy Air Fryer Fish Cakes with Garlic & Parsley


Ingredients

  • 1 pound white fish fillets, fully thawed and patted dry
  • 2 cups mashed potatoes, cooked and completely cooled
  • 1 tablespoon sour cream
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon Italian-style seasoning
  • 2 large eggs
  • 2 cups panko-style breadcrumbs
  • Lemon wedges, for serving (optional)
  • Tartar sauce or yogurt-based sauce, for serving (optional)

Instructions

  1. Cook the Fish
  2. Preheat the air fryer to 375°F and line the basket with parchment paper. Lightly season the fish with salt and pepper and arrange in a single layer. Air fry for 10–12 minutes, until the fish flakes easily and is cooked through. Remove and let cool slightly.
  3. Prepare the Mixture
  4. In a large bowl, mix the mashed potatoes, sour cream, salt, pepper, garlic, parsley, Italian seasoning, and eggs until smooth. Gently flake the cooked fish into small pieces and fold it into the mixture, being careful not to overmix.
  5. Shape and Coat
  6. Place the breadcrumbs in a shallow dish. Form the mixture into small patties about 2½ to 3 inches wide. Roll each patty in the breadcrumbs, pressing gently so they are evenly coated. Place on a parchment-lined tray and refrigerate for 30 minutes to help them hold their shape.
  7. Air Fry the Fish Cakes
  8. Preheat the air fryer to 425°F. Arrange the chilled fish cakes in a single layer, leaving space between each one. Cook in batches if needed. Air fry for 15–20 minutes, flipping halfway through, until crisp and golden brown.
  9. Rest and Serve
  10. Let the fish cakes rest for about 5 minutes before serving. Enjoy warm with lemon wedges and your favorite sauce, if desired.
