- 8 ounces mushrooms, sliced
- 2 cups orzo pasta
- 3 cups chicken broth

- ½ cup grated Parmesan cheese
- Salt, to taste
- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons finely chopped rosemary
- 2 garlic cloves, minced
- ½ teaspoon paprika
- 2 teaspoons lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a small bowl, mix together the olive oil, lemon juice, rosemary, garlic, paprika, salt, and pepper.
- Slice each chicken breast horizontally to create thin cutlets.
- Coat the chicken in the marinade and let it rest while preparing the orzo.
- Heat the olive oil in a deep skillet or braiser over medium heat.
- Add the chopped onion and garlic, cooking for 2–3 minutes until soft and aromatic.
- Add the sliced mushrooms and sauté for 5–6 minutes, until golden and their moisture has evaporated.
- Stir in the orzo and toast it for about 1 minute.
- Pour in the chicken broth and heavy cream.
- Season with salt and black pepper.
- Reduce the heat, partially cover, and let the mixture simmer for about 10 minutes, stirring occasionally, until the orzo becomes tender and creamy.
- Stir in the Parmesan cheese and adjust seasoning if needed.
- Heat a large skillet over high heat.
- Add a small amount of olive oil if necessary.
- Sear the marinated chicken cutlets for 2–3 minutes per side, or until browned and fully cooked.
- Remove from heat.
- Scoop the creamy mushroom orzo onto plates or bowls.
- Top with the warm lemon herb chicken.
- Garnish with extra Parmesan and lemon wedges if desired.
