Ingredients

  • 1 tablespoon olive oil
  • ½ medium onion, finely chopped
  • 3 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 2 cups orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1½ teaspoons black pepper
  • ½ cup grated Parmesan cheese
  • Salt, to taste
  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons finely chopped rosemary
  • 2 garlic cloves, minced
  • ½ teaspoon paprika
  • 2 teaspoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a small bowl, mix together the olive oil, lemon juice, rosemary, garlic, paprika, salt, and pepper.
  2. Slice each chicken breast horizontally to create thin cutlets.
  3. Coat the chicken in the marinade and let it rest while preparing the orzo.
  4. Heat the olive oil in a deep skillet or braiser over medium heat.
  5. Add the chopped onion and garlic, cooking for 2–3 minutes until soft and aromatic.
  6. Add the sliced mushrooms and sauté for 5–6 minutes, until golden and their moisture has evaporated.
  7. Stir in the orzo and toast it for about 1 minute.
  8. Pour in the chicken broth and heavy cream.
  9. Season with salt and black pepper.
  10. Reduce the heat, partially cover, and let the mixture simmer for about 10 minutes, stirring occasionally, until the orzo becomes tender and creamy.
  11. Stir in the Parmesan cheese and adjust seasoning if needed.
  12. Heat a large skillet over high heat.
  13. Add a small amount of olive oil if necessary.
  14. Sear the marinated chicken cutlets for 2–3 minutes per side, or until browned and fully cooked.
  15. Remove from heat.
  16. Scoop the creamy mushroom orzo onto plates or bowls.
  17. Top with the warm lemon herb chicken.
  18. Garnish with extra Parmesan and lemon wedges if desired.
