Description
A quick and delicious creamy ground beef and cheese tortellini skillet, perfect for a hearty weeknight dinner.
Ingredients
Scale
- 1 pound ground beef
- ½ yellow onion, diced (about ½ cup)
- 2 tablespoons hamburger seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 teaspoons minced garlic
- 1 ½ cups (12 ounces) beef broth
- 1 cup (238 g) heavy cream
- 1 can (14.5 ounces) petite diced tomatoes, drained
- 1 package (20 ounces) refrigerated cheese tortellini
- 2 cups (226 g) shredded sharp cheddar cheese
- Finely diced dill pickle, for garnish (optional)
- Freshly diced tomatoes, for garnish (optional)
- Fresh parsley, chopped for garnish
Instructions
- In a large skillet over medium-high heat, add ground beef and diced onion. Cook, breaking up the beef as it browns, for about 6-8 minutes. Drain any excess grease.
- Reduce the heat to medium and season with hamburger seasoning, salt, pepper, and red pepper flakes (if using). Add the minced garlic and cook for an additional minute.
- Stir in beef broth, heavy cream, and drained tomatoes, combining everything thoroughly.
- Add the refrigerated cheese tortellini and stir to mix. Cover the skillet and let it simmer for 6-8 minutes, stirring occasionally, until the tortellini is tender and cooked through.
- Remove from heat and stir in the shredded cheddar cheese until it’s fully melted and incorporated.
- Garnish with finely diced dill pickles, fresh diced tomatoes, and chopped parsley if desired. Serve hot.
Notes
- Fresh ingredients like garlic, onions, and herbs significantly enhance flavor.
- Avoid overcooking the tortellini to prevent a mushy texture.
- Customize your cheese blend by mixing cheddar with mozzarella for extra gooeyness.
- Adjust creaminess by adding a splash more heavy cream if desired.
- Experiment with different herbs like thyme, basil, or oregano to vary the flavor profile.
- This dish is customizable with added vegetables, different cheeses, or alternative proteins.
- Leftovers can be stored in airtight containers and reheated on the stove.
