  • 1 ½ cups (12 ounces) beef broth
  • 1 cup (238 g) heavy cream
  • 1 can (14.5 ounces) petite diced tomatoes, drained
  • 1 package (20 ounces) refrigerated cheese tortellini
  • 2 cups (226 g) shredded sharp cheddar cheese
  • Finely diced dill pickle, for garnish (optional)
  • Freshly diced tomatoes, for garnish (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet over medium-high heat, add ground beef and diced onion. Cook, breaking up the beef as it browns, for about 6-8 minutes. Drain any excess grease.
  2. Reduce the heat to medium and season with hamburger seasoning, salt, pepper, and red pepper flakes (if using). Add the minced garlic and cook for an additional minute.
  3. Stir in beef broth, heavy cream, and drained tomatoes, combining everything thoroughly.
  4. Add the refrigerated cheese tortellini and stir to mix. Cover the skillet and let it simmer for 6-8 minutes, stirring occasionally, until the tortellini is tender and cooked through.
  5. Remove from heat and stir in the shredded cheddar cheese until it’s fully melted and incorporated.
  6. Garnish with finely diced dill pickles, fresh diced tomatoes, and chopped parsley if desired. Serve hot.
