Description

A rich, creamy one-skillet chicken sausage dinner with peppers, onions, mushrooms, and herbs.


Ingredients

Scale
  • 2 teaspoons olive oil
  • 46 chicken sausages
  • 2 tablespoons butter
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 3 garlic cloves, sliced
  • 1½ cups sliced mushrooms
  • 1 teaspoon tomato paste
  • 1 teaspoon Dijon mustard
  • ½ tablespoon smoked paprika
  • Salt and pepper
  • 1½ cups low-sodium chicken broth, divided
  • 2 tablespoons sour cream
  • Chopped parsley, dill, or tarragon

Instructions

  1. Warm 1 teaspoon olive oil and brown the sausages.
  2. Add remaining oil and butter, then cook onion, pepper, garlic, and mushrooms for 8 minutes.
  3. Stir in tomato paste, mustard, paprika, salt, and pepper.
  4. Pour in ½ cup broth and simmer 2–3 minutes.
  5. Return sausages and add remaining broth; simmer 15 minutes.
  6. Remove from heat and stir in sour cream and herbs.
  7. Serve warm with potatoes, rice, or bread.
