Description
A rich, creamy one-skillet chicken sausage dinner with peppers, onions, mushrooms, and herbs.
Ingredients

- 2 teaspoons olive oil
- 4–6 chicken sausages
- 2 tablespoons butter
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 3 garlic cloves, sliced
- 1½ cups sliced mushrooms
- 1 teaspoon tomato paste
- 1 teaspoon Dijon mustard
- ½ tablespoon smoked paprika
- Salt and pepper
- 1½ cups low-sodium chicken broth, divided
- 2 tablespoons sour cream
- Chopped parsley, dill, or tarragon
Instructions
- Warm 1 teaspoon olive oil and brown the sausages.
- Add remaining oil and butter, then cook onion, pepper, garlic, and mushrooms for 8 minutes.
- Stir in tomato paste, mustard, paprika, salt, and pepper.
- Pour in ½ cup broth and simmer 2–3 minutes.
- Return sausages and add remaining broth; simmer 15 minutes.
- Remove from heat and stir in sour cream and herbs.
- Serve warm with potatoes, rice, or bread.
