- Salt and black pepper
- 1 large yellow onion, chopped
- 1 red or yellow bell pepper, sliced
- 1 can tomato paste
- 1 can full-fat coconut milk
- 2 tablespoons butter
- 2 tablespoons sesame seeds
- 2 small cucumbers
- Pickled ginger
- Fresh cilantro or mint
- Jalapeño
- Lemon juice
Instructions
- Season chicken with yogurt, spices, garlic, and ginger.
- Add onion, bell pepper, coconut milk, and tomato paste.
- Top with butter and sesame seeds.
- Bake uncovered at 400°F for 30–40 minutes.
- Prepare cucumber salad while baking.
- Make turmeric butter.
- Serve over rice with flatbread.
