Ingredients

  • 1 tablespoon fresh ginger, grated

  • 12 teaspoons cayenne pepper
  • Salt and black pepper
  • 1 large yellow onion, chopped
  • 1 red or yellow bell pepper, sliced
  • 1 can tomato paste
  • 1 can full-fat coconut milk
  • 2 tablespoons butter
  • 2 tablespoons sesame seeds
  • 2 small cucumbers
  • Pickled ginger
  • Fresh cilantro or mint
  • Jalapeño
  • Lemon juice

Instructions

  1. Season chicken with yogurt, spices, garlic, and ginger.
  2. Add onion, bell pepper, coconut milk, and tomato paste.
  3. Top with butter and sesame seeds.
  4. Bake uncovered at 400°F for 30–40 minutes.
  5. Prepare cucumber salad while baking.
  6. Make turmeric butter.
  7. Serve over rice with flatbread.
