- 1 tablespoon olive oil
- ⅓ cup all-purpose flour
- 1 to 2 boneless, skinless chicken breasts
- 4 garlic cloves, minced
- 1 small shallot, minced
- 5 sun-dried tomatoes, chopped
- ½ tablespoon smoked paprika
- ½ tablespoon red pepper flakes
- ½ tablespoon dried oregano
- ¾ cup chicken broth
- ¾ cup light or heavy cream
- Salt and black pepper
- 2 tablespoons grated Parmesan
- 4 lettuce leaves
- 1 cup arugula
- 4 sun-dried tomatoes, sliced
- 5 basil leaves
- 1 tablespoon grated Parmesan
- Juice from 1 lemon wedge
- 2 small baguettes
Instructions
- Coat chicken lightly with flour.
- Sear chicken in olive oil until golden and cooked through. Remove.
- Cook shallot, then garlic until fragrant.
- Add sun-dried tomatoes and spices.
- Pour in broth and cream, then Parmesan. Season.
- Return chicken and simmer gently.
- Chop chicken and toss with greens, sauce, and lemon.
- Fill baguettes and serve warm.
