Ingredients

  • 1 tablespoon olive oil
  • ⅓ cup all-purpose flour
  • 1 to 2 boneless, skinless chicken breasts
  • 4 garlic cloves, minced
  • 1 small shallot, minced
  • 5 sun-dried tomatoes, chopped
  • ½ tablespoon smoked paprika
  • ½ tablespoon red pepper flakes
  • ½ tablespoon dried oregano
  • ¾ cup chicken broth
  • ¾ cup light or heavy cream
  • Salt and black pepper
  • 2 tablespoons grated Parmesan
  • 4 lettuce leaves
  • 1 cup arugula
  • 4 sun-dried tomatoes, sliced
  • 5 basil leaves
  • 1 tablespoon grated Parmesan
  • Juice from 1 lemon wedge
  • 2 small baguettes

Instructions

  1. Coat chicken lightly with flour.
  2. Sear chicken in olive oil until golden and cooked through. Remove.
  3. Cook shallot, then garlic until fragrant.
  4. Add sun-dried tomatoes and spices.
  5. Pour in broth and cream, then Parmesan. Season.
  6. Return chicken and simmer gently.
  7. Chop chicken and toss with greens, sauce, and lemon.
  8. Fill baguettes and serve warm.
