Description
A rustic no-knead artisan loaf with cranberries, raisins, walnuts, and warm cinnamon flavor.
Ingredients
Scale
- 1½ cups room-temperature water
- 2–3 tablespoons honey
- 1 teaspoon active dry yeast
- 3 cups bread flour or all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ¾ cup dried cranberries
- ½–¾ cup raisins
- ½ cup chopped walnuts
Instructions
- Stir water and honey, sprinkle yeast, rest until foamy.
- Combine dry ingredients in a bowl.
- Mix wet and dry until shaggy.
- Cover and rise 8–10 hours.
- Shape and refrigerate overnight.
- Preheat Dutch oven to 450°F.
- Score dough and bake covered 30 minutes.
- Uncover and bake 15–20 minutes.
- Cool before slicing.
