Description

A rustic no-knead artisan loaf with cranberries, raisins, walnuts, and warm cinnamon flavor.


Ingredients

Scale
  • 1½ cups room-temperature water
  • 23 tablespoons honey
  • 1 teaspoon active dry yeast
  • 3 cups bread flour or all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¾ cup dried cranberries
  • ½¾ cup raisins
  • ½ cup chopped walnuts

Instructions

  1. Stir water and honey, sprinkle yeast, rest until foamy.
  2. Combine dry ingredients in a bowl.
  3. Mix wet and dry until shaggy.
  4. Cover and rise 8–10 hours.
  5. Shape and refrigerate overnight.
  6. Preheat Dutch oven to 450°F.
  7. Score dough and bake covered 30 minutes.
  8. Uncover and bake 15–20 minutes.
  9. Cool before slicing.
