Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
- In a large bowl, beat the softened butter with the brown and white sugars until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract and brewed coffee.
- In a separate bowl, whisk together flour, baking powder, and salt. Add this to the wet ingredients in batches, alternating with the milk. Mix just until combined.
- Spoon the batter evenly into the cupcake liners, filling each about ⅔ full. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
- Make the Buttercream: Beat the softened butter until fluffy. Gradually add the powdered sugar, followed by the brewed coffee, vanilla, and a pinch of salt. Keep beating until smooth and silky.
