Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
  2. In a large bowl, beat the softened butter with the brown and white sugars until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract and brewed coffee.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Add this to the wet ingredients in batches, alternating with the milk. Mix just until combined.
  4. Spoon the batter evenly into the cupcake liners, filling each about ⅔ full. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  5. Make the Buttercream: Beat the softened butter until fluffy. Gradually add the powdered sugar, followed by the brewed coffee, vanilla, and a pinch of salt. Keep beating until smooth and silky.
