Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts
  • 1/2 cup dried fruit
  • 1/4 cup flaxseed meal or chia seeds

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch pan with parchment paper, leaving an overhang for easy bar removal.
  2. In a large bowl, whisk oats, flour, baking soda, cinnamon, and salt until evenly blended.
  3. In another bowl, whisk melted butter, brown sugar, honey or maple syrup, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients; stir gently until just combined, ensuring no streaks of flour remain.
  5. Gently fold in chocolate chips (and optional nuts or dried fruit) to create pockets of gooey, sweet surprises in every bite.
  6. Transfer the dough to your prepared pan, using your hands or a spatula to press it firmly and evenly into all corners.
  7. Bake at 350°F for 20–25 minutes until the edges turn golden brown and the center feels set but slightly soft to the touch.
  8. Allow the bars to cool completely in the pan on a wire rack, then use the parchment overhang to lift and slice into squares.
