- 2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 1 cup brown sugar (packed)
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/2 cup chopped nuts
- 1/2 cup dried fruit
- 1/4 cup flaxseed meal or chia seeds
Instructions
- Preheat oven to 350°F and line an 8×8-inch pan with parchment paper, leaving an overhang for easy bar removal.
- In a large bowl, whisk oats, flour, baking soda, cinnamon, and salt until evenly blended.
- In another bowl, whisk melted butter, brown sugar, honey or maple syrup, eggs, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients; stir gently until just combined, ensuring no streaks of flour remain.
- Gently fold in chocolate chips (and optional nuts or dried fruit) to create pockets of gooey, sweet surprises in every bite.
- Transfer the dough to your prepared pan, using your hands or a spatula to press it firmly and evenly into all corners.
- Bake at 350°F for 20–25 minutes until the edges turn golden brown and the center feels set but slightly soft to the touch.
- Allow the bars to cool completely in the pan on a wire rack, then use the parchment overhang to lift and slice into squares.
