  • 3 cups Vegetable Broth (low-sodium)
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Chili Flakes (optional)

  • 2 tablespoons Lemon Juice
  • 1/4 cup Fresh Parsley or Cilantro (chopped)
  • 1 tablespoon Olive Oil (for cooking)

Instructions

  1. Warm 1 tablespoon olive oil in a large pot over medium heat until it shimmers, about 1 minute.
  2. Add the finely chopped onion; cook 4–5 minutes until soft and lightly golden. Stir in minced garlic and cook 1 minute until fragrant.
  3. Sprinkle in ground cumin, smoked paprika, and chili flakes. Stir constantly for 30 seconds to release their warm, earthy aroma.
  4. Pour in diced tomatoes with their juices and vegetable broth. Increase heat to medium-high and bring to a gentle simmer in 3–4 minutes.
  5. Stir in drained chickpeas until coated in the tomato-spice liquid. Reduce heat and let stew simmer 10 minutes, thickening slightly.
  6. Add fresh spinach in batches, folding each handful into the hot stew until it wilts and turns a vibrant green, about 2–3 minutes.
  7. Squeeze in lemon juice, then season with salt and pepper to taste. Give one final stir before serving warm.
