Instructions
- Warm 1 tablespoon olive oil in a large pot over medium heat until it shimmers, about 1 minute.
- Add the finely chopped onion; cook 4–5 minutes until soft and lightly golden. Stir in minced garlic and cook 1 minute until fragrant.
- Sprinkle in ground cumin, smoked paprika, and chili flakes. Stir constantly for 30 seconds to release their warm, earthy aroma.
- Pour in diced tomatoes with their juices and vegetable broth. Increase heat to medium-high and bring to a gentle simmer in 3–4 minutes.
- Stir in drained chickpeas until coated in the tomato-spice liquid. Reduce heat and let stew simmer 10 minutes, thickening slightly.
- Add fresh spinach in batches, folding each handful into the hot stew until it wilts and turns a vibrant green, about 2–3 minutes.
- Squeeze in lemon juice, then season with salt and pepper to taste. Give one final stir before serving warm.
