- 1/2 cup Water chestnuts (Chopped)
- 8 leaves Butter lettuce leaves (Soft and pliable)
- 1 lime Fresh lime juice (Squeezed)
- 1/4 cup Chopped cilantro (For garnish)
Instructions
- In a bowl, toss diced chicken with minced garlic, grated ginger, and soy sauce. Let sit for 10 minutes.
- Heat oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes, stirring until cooked through and golden.
- In a bowl, toss shredded carrots, diced bell peppers, sliced green onions, and chopped water chestnuts; season with salt.
- Heat the skillet over medium heat with a splash of oil. Stir-fry veggies for 3–4 minutes until vibrant.
- Return chicken to the skillet and stir gently with veggies for another 2 minutes until hot throughout.
- Place a spoonful of filling in each lettuce leaf, drizzle with lime juice, and sprinkle with cilantro.
