Easy Chicken Souvlaki Skewers with Grilled Vegetables – Authentic Greek Flavor at Home


Ingredients

  • 3 pounds boneless, skinless chicken thighs, cut into -inch pieces
  • 1/3 cup vegetable oil
  • 1/3 cup fresh lemon juice
  • 4 garlic cloves, minced
  • 1½ tablespoons dried oregano
  • 2½ teaspoons salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 12 ounces halloumi cheese, cut into cubes
  • 2 large bell peppers, cut into chunks
  • 1 large red onion, cut into chunks
  • 1½ cups cherry tomatoes
  • 2 tablespoons olive oil
  • Salt, to taste
  • Warm pita bread
  • Lemon wedges
  • Tzatziki sauce
  • Sliced fresh tomatoes
  • Sliced onions

Instructions

  1. Whisk together vegetable oil, lemon juice, garlic, oregano, salt, cumin, black pepper, and red pepper flakes. Toss chicken in marinade and refrigerate at least 1 hour.
  2. Thread marinated chicken onto skewers. On separate skewers, thread halloumi, peppers, onion, and tomatoes. Brush vegetables with olive oil and sprinkle with salt.
  3. Preheat grill to medium-high and oil grates. Grill chicken 10–12 minutes until internal temperature reaches 165°F.
  4. Grill vegetables 6–8 minutes until tender and lightly charred.
  5. Warm pita on grill 1 minute per side. Serve skewers with pita, lemon wedges, tzatziki, tomatoes, and onions.
