Easy Chicken Souvlaki Skewers with Grilled Vegetables – Authentic Greek Flavor at Home

- 3 pounds boneless, skinless chicken thighs, cut into 1½-inch pieces
- 1/3 cup vegetable oil
- 1/3 cup fresh lemon juice
- 4 garlic cloves, minced
- 1½ tablespoons dried oregano
- 2½ teaspoons salt
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 12 ounces halloumi cheese, cut into cubes
- 2 large bell peppers, cut into chunks
- 1 large red onion, cut into chunks
- 1½ cups cherry tomatoes
- 2 tablespoons olive oil
- Salt, to taste
- Warm pita bread
- Lemon wedges
- Tzatziki sauce
- Sliced fresh tomatoes
- Sliced onions
Instructions
- Whisk together vegetable oil, lemon juice, garlic, oregano, salt, cumin, black pepper, and red pepper flakes. Toss chicken in marinade and refrigerate at least 1 hour.
- Thread marinated chicken onto skewers. On separate skewers, thread halloumi, peppers, onion, and tomatoes. Brush vegetables with olive oil and sprinkle with salt.
- Preheat grill to medium-high and oil grates. Grill chicken 10–12 minutes until internal temperature reaches 165°F.
- Grill vegetables 6–8 minutes until tender and lightly charred.
- Warm pita on grill 1 minute per side. Serve skewers with pita, lemon wedges, tzatziki, tomatoes, and onions.
