- 2 pieces Boneless, skinless chicken breasts
- 8 ounces Fettuccine pasta
- 2 tablespoons Olive oil
- 1/2 cup Butter
- 1 cup Heavy cream
- 3 cloves Garlic cloves
- 1 cup Parmesan cheese
- 1 teaspoon Salt
- 1 teaspoon Freshly ground black pepper
- 2 tablespoons Fresh parsley
- 1/2 teaspoon Crushed red pepper flakes
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering, about 2 minutes.
- Season both sides of chicken breasts with salt and pepper.
- Sear chicken in the hot skillet, cooking 5 minutes per side until golden brown and cooked through.
- Transfer to a plate and let rest.
- Boil salted water in a large pot, then cook fettuccine until al dente, about 10–12 minutes. Drain, reserving ½ cup of pasta water.
- Melt butter in the same skillet over medium-low heat until foaming.
- Sauté garlic in the melted butter for 30 seconds until fragrant.
- Simmer heavy cream in the skillet, stirring gently and bringing to a light boil.
- Blend in grated Parmesan cheese off heat, whisking until smooth.
- Combine the drained pasta and sliced chicken into the sauce, tossing gently to coat.
- Garnish with chopped parsley and a sprinkle of red pepper flakes.
