Instructions

  1. In a medium mixing bowl, combine the flour, shredded cheddar cheese, baking powder, garlic powder, kosher salt, and sugar. Stir until everything is evenly mixed.
  2. In a separate bowl, whisk together the egg, milk, and melted butter until fully combined and smooth.
  3. Pour the wet ingredients into the dry mixture. Stir gently until just combined—avoid overmixing.
  4. Carefully fold in the sweet corn kernels and diced jalapeños.
  5. Heat vegetable oil in a deep pot over medium heat until it reaches 350°F.
  6. Working in batches, drop 4-5 spoonfuls of batter into the hot oil.

  8. After each batch, check the oil temperature to ensure it remains at 350°F.
