Description

A hearty dinner salad with Cajun-roasted salmon, crunchy garlic breadcrumbs, creamy tahini dressing, capers, and avocado.


Ingredients

  • pounds salmon fillets
  • 34 tablespoons Cajun seasoning
  • 2 tablespoons olive oil or butter
  • 2 cups white bread
  • 1 garlic clove
  • 4 tablespoons butter
  • Salt
  • 6 cups mixed greens
  • 1 cup fresh herbs
  • 1 cup Parmesan
  • 3 tablespoons sesame seeds
  • 2 avocados
  • 2 tablespoons capers
  • ⅓ cup olive oil
  • 3 tablespoons sesame oil
  • ½ cup tahini
  • ¼ cup lemon juice
  • 1 tablespoon Dijon
  • 2 teaspoons savory seasoning sauce
  • 12 garlic cloves
  • ½ cup Parmesan
  • ¼½ cup water
  • Salt

Instructions

  1. Preheat oven to 450°F and grease a baking sheet.
  2. Toss salmon with Cajun seasoning and oil, then roast 10–15 minutes.
  3. Toast bread with garlic, butter, and salt until golden.
  4. Whisk all dressing ingredients until smooth.
  5. Toss salad base with dressing.
  6. Top with salmon and breadcrumbs, then serve.
