Bright & Zesty Cranberry Orange Salad You’ll Crave All Year
Ingredients

- 2 cups Fresh cranberries (Use tart, firm cranberries.)
- 2 medium Oranges (Choose seedless, juicy oranges.)
- 4 cups Baby spinach or mixed greens
- 1/4 cup Red onion (Thinly sliced.)
- 1/2 cup Toasted pecans or walnuts
- 1 tablespoon Honey
- 2 tablespoons Fresh lime juice
- 3 tablespoons Olive oil
- to taste Salt and pepper
Instructions
- Rinse and drain cranberries, peel and segment oranges, removing any pith. Pat segments dry.
- Thinly slice red onion, soak in cold water for 5 minutes. Drain and pat dry.
- Toast pecans or walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant.
- Place baby spinach or mixed greens in a large bowl and fluff gently.
- Whisk honey, fresh lime juice, and olive oil in a small bowl. Season with salt and pepper.
- Add cranberries, orange segments, onion, and nuts to greens. Drizzle dressing and toss gently.
- Transfer salad to a serving platter, sprinkle extra nuts or lime zest on top, and serve immediately.
