Description

Bright & Zesty Cranberry Orange Salad You’ll Crave All Year


Ingredients

Scale
  • 2 cups Fresh cranberries (Use tart, firm cranberries.)
  • 2 medium Oranges (Choose seedless, juicy oranges.)
  • 4 cups Baby spinach or mixed greens
  • 1/4 cup Red onion (Thinly sliced.)
  • 1/2 cup Toasted pecans or walnuts
  • 1 tablespoon Honey
  • 2 tablespoons Fresh lime juice
  • 3 tablespoons Olive oil
  • to taste Salt and pepper

Instructions

  1. Rinse and drain cranberries, peel and segment oranges, removing any pith. Pat segments dry.
  2. Thinly slice red onion, soak in cold water for 5 minutes. Drain and pat dry.
  3. Toast pecans or walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant.
  4. Place baby spinach or mixed greens in a large bowl and fluff gently.
  5. Whisk honey, fresh lime juice, and olive oil in a small bowl. Season with salt and pepper.
  6. Add cranberries, orange segments, onion, and nuts to greens. Drizzle dressing and toss gently.
  7. Transfer salad to a serving platter, sprinkle extra nuts or lime zest on top, and serve immediately.
