Ingredients

  • 4 large eggs, whisked
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup fresh bell peppers, diced
  • 1/2 cup onion, finely chopped
  • 1 cup cooked breakfast sausage or bacon (optional)
  • 2 large flour tortillas
  • 2 tablespoons butter or oil
  • Optional Toppings: Sour cream or Greek yogurt, fresh salsa, avocado slices or guacamole

Instructions

  1. Heat a drizzle of oil in a skillet over medium heat. Sauté diced peppers and onions until tender, about 4 minutes.
  2. Crack eggs into a bowl, season with salt and pepper, and whisk until smooth.
  3. Pour eggs into the skillet and scramble gently until just set, about 2 minutes. Transfer to a plate.
  4. If using sausage or bacon, add to the skillet and cook until golden-brown, about 5 minutes.
  5. Preheat the skillet, lightly butter or oil the surface.
  6. Place one tortilla in the skillet. Sprinkle half the cheese over the tortilla.
  7. Top the cheese with the egg mixture, cooked vegetables, and optional meat. Sprinkle with the remaining cheese.
  8. Place the second tortilla on top. Press gently to seal the edges.
  9. Cook for 2–3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
  10. Serve immediately with your favorite toppings like salsa or guacamole.
