- 4 large eggs, whisked
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup fresh bell peppers, diced
- 1/2 cup onion, finely chopped
- 1 cup cooked breakfast sausage or bacon (optional)
- 2 large flour tortillas
- 2 tablespoons butter or oil
- Optional Toppings: Sour cream or Greek yogurt, fresh salsa, avocado slices or guacamole
Instructions
- Heat a drizzle of oil in a skillet over medium heat. Sauté diced peppers and onions until tender, about 4 minutes.
- Crack eggs into a bowl, season with salt and pepper, and whisk until smooth.
- Pour eggs into the skillet and scramble gently until just set, about 2 minutes. Transfer to a plate.
- If using sausage or bacon, add to the skillet and cook until golden-brown, about 5 minutes.
- Preheat the skillet, lightly butter or oil the surface.
- Place one tortilla in the skillet. Sprinkle half the cheese over the tortilla.
- Top the cheese with the egg mixture, cooked vegetables, and optional meat. Sprinkle with the remaining cheese.
- Place the second tortilla on top. Press gently to seal the edges.
- Cook for 2–3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
- Serve immediately with your favorite toppings like salsa or guacamole.
