Blueberry Feta Burgers with Jalapeño Aioli That Balance Sweet and Savory


Ingredients

  • 6 beef burger patties
  • 6 brioche-style burger buns
  • ½ red onion, thinly sliced
  • 8 ounces crumbled feta cheese
  • 1½ cups fresh arugula
  • 1 pint blueberries
  • ¼ cup granulated sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • ¼ cup water
  • Pinch of salt
  • 12 fresh jalapeños, seeded and chopped
  • ¼ cup fresh basil leaves
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic powder
  • ¼ cup mayonnaise
  • Salt to taste

Instructions

  1. Soak sliced red onion in cold water, then drain.
  2. Simmer blueberries, sugar, lemon juice, and salt until boiling.
  3. Whisk cornstarch with water and stir into blueberries until thickened.
  4. Blend jalapeños, basil, olive oil, lemon juice, and garlic powder until smooth.
  5. Stir blended mixture into mayonnaise and season with salt.
  6. Grill burger patties over medium heat about 5 minutes per side.
  7. Assemble burgers with arugula, patty, blueberry sauce, feta, onion, and aioli.
