- 6 beef burger patties
- 6 brioche-style burger buns
- ½ red onion, thinly sliced
- 8 ounces crumbled feta cheese
- 1½ cups fresh arugula
- 1 pint blueberries
- ¼ cup granulated sugar
- 3 tablespoons lemon juice
- 1 tablespoon cornstarch
- ¼ cup water
- Pinch of salt
- 1–2 fresh jalapeños, seeded and chopped
- ¼ cup fresh basil leaves
- ¼ cup olive oil
- 2 tablespoons lemon juice
- ½ teaspoon garlic powder
- ¼ cup mayonnaise
- Salt to taste
Instructions
- Soak sliced red onion in cold water, then drain.
- Simmer blueberries, sugar, lemon juice, and salt until boiling.
- Whisk cornstarch with water and stir into blueberries until thickened.
- Blend jalapeños, basil, olive oil, lemon juice, and garlic powder until smooth.
- Stir blended mixture into mayonnaise and season with salt.
- Grill burger patties over medium heat about 5 minutes per side.
- Assemble burgers with arugula, patty, blueberry sauce, feta, onion, and aioli.
