- 1 cup nut butter
- 1/2 cup honey or maple syrup
- 1/2 cup mini chocolate chips
- 1/2 cup chopped nuts
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt flakes
- 1/4 cup shredded coconut
- 1/4 cup cacao nibs
Instructions
- In a large bowl, stir together oats, nut butter, honey, and vanilla until well coated.
- Gently fold in mini chocolate chips and chopped nuts with a spatula.
- Cover the bowl with plastic wrap or lid, then refrigerate for about 20 minutes.
- Scoop tablespoon-sized portions with a cookie scoop or spoon and roll into balls.
- Arrange the bites on a parchment-lined tray and chill for another 10 minutes.
- Place bites in an airtight container and refrigerate.
