  • 1 cup Rolled Oats (Old-Fashioned)
  • 2 cups Tightly Packed Shredded Carrots
  • 1 cup Pitted Medjool Dates
  • ½ cup Unsweetened Shredded Coconut (divided)
  • ¼ cup Cream Cheese, softened
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ¼ teaspoon Ground Ginger
  • ¼ teaspoon Salt

Instructions

  1. Wash, peel, and finely shred the carrots. Set aside.
  2. In a food processor, combine walnuts and rolled oats. Pulse until a coarse meal forms.
  3. Add cinnamon, nutmeg, ginger, ¼ cup coconut, and salt to the food processor. Pulse to combine.
  4. Add shredded carrots, pitted dates, softened cream cheese, and vanilla extract to the food processor.
  5. Process until a sticky dough forms, scraping down sides as needed. If too dry, add water or a date; if too wet, add oats.
  6. Transfer the mixture to a bowl, cover, and chill in the refrigerator for at least 30 minutes.
  7. Place the remaining ¼ cup shredded coconut in a shallow dish.
  8. Scoop and roll portions of the chilled dough into 1-1.5 inch balls.
  9. Roll each ball in the shredded coconut to coat.
  10. Store the carrot cake balls in an airtight container in the refrigerator for up to one week.
