Instructions
- Wash, peel, and finely shred the carrots. Set aside.
- In a food processor, combine walnuts and rolled oats. Pulse until a coarse meal forms.
- Add cinnamon, nutmeg, ginger, ¼ cup coconut, and salt to the food processor. Pulse to combine.
- Add shredded carrots, pitted dates, softened cream cheese, and vanilla extract to the food processor.
- Process until a sticky dough forms, scraping down sides as needed. If too dry, add water or a date; if too wet, add oats.
- Transfer the mixture to a bowl, cover, and chill in the refrigerator for at least 30 minutes.
- Place the remaining ¼ cup shredded coconut in a shallow dish.
- Scoop and roll portions of the chilled dough into 1-1.5 inch balls.
- Roll each ball in the shredded coconut to coat.
- Store the carrot cake balls in an airtight container in the refrigerator for up to one week.
