Instructions

- In a bowl, whisk fresh lime juice, olive oil, salt, and pepper until smooth and tangy.
- In serving bowls, layer mixed greens and quinoa as a base. Top with chopped veggies and avocado, then drizzle the lime dressing over everything.
- Sprinkle toasted pumpkin seeds, feta crumbles, and chopped cilantro for crunch and freshness. Serve immediately.
