Easy Avocado Lime Veggie Power Bowl for Bold Homemade Flavor


Ingredients

  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 whole Red Bell Pepper
  • 1 cup Cooked Quinoa
  • 2 cups Mixed Greens
  • 2 tablespoons Fresh Lime Juice
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Toasted Pumpkin Seeds
  • 1/4 cup Feta Cheese Crumbles
  • 2 tablespoons Chopped Cilantro

Instructions

  1. In a small pot, bring water and a pinch of salt to a boil. Add quinoa, reduce heat, simmer 15 minutes until tender and fluffy; fluff with a fork.
  2. Slice cherry tomatoes, cucumber, and red bell pepper into bite-sized pieces. Scoop ripe avocado into chunks.
  3. In a bowl, whisk fresh lime juice, olive oil, salt, and pepper until smooth and tangy.
  4. In serving bowls, layer mixed greens and quinoa as a base. Top with chopped veggies and avocado, then drizzle the lime dressing over everything.
  5. Sprinkle toasted pumpkin seeds, feta crumbles, and chopped cilantro for crunch and freshness. Serve immediately.
