Description

- 2 sheets puff pastry, thawed
- All-purpose flour, for dusting
- 1 large egg, beaten
- 5 tablespoons unsalted butter, divided
- 1 medium onion, thinly sliced
- 1 teaspoon finely chopped fresh rosemary
- 7 ounces goat cheese
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper, to taste
- 3 apples, peeled, cored, and thinly sliced
- 1 pear, peeled, cored, and thinly sliced
- 1/3 cup walnuts, toasted and finely chopped
- Pinch of ground allspice
- 4 tablespoons honey
- Fresh herbs or small basil leaves, optional
Instructions
- Preheat the oven to 375°F and line a large baking sheet with parchment paper.
- In a skillet over medium heat, melt 2 1/2 tablespoons of butter. Add the sliced onion and rosemary and cook until soft and lightly golden, about 5–6 minutes. Set aside to cool.
- Lightly flour a clean work surface and roll out the puff pastry to about 1/4-inch thickness. Cut out approximately twenty 4-inch circles.
- Place ten pastry rounds on the prepared baking sheet and prick them all over with a fork. From the remaining rounds, cut out smaller circles to create rings.
- Brush the base rounds with beaten egg, then place a ring on top of each one to form raised edges. Chill the pastry shells in the freezer for 15 minutes.
- In a bowl, gently mix the goat cheese with lemon juice, salt, and pepper until just combined, keeping the texture slightly crumbly.
- Spoon a small amount of the onion mixture onto each chilled pastry base, followed by about 1 tablespoon of the goat cheese mixture.
- Arrange the apple and pear slices over the cheese, slightly overlapping, and sprinkle with chopped walnuts.
- Melt the remaining butter and lightly brush it over the fruit. Sprinkle with allspice.
- Bake for 25–30 minutes, or until the pastry is puffed and golden brown.
- Drizzle the warm tarts with honey and garnish with fresh herbs if desired. Serve warm or at room temperature.
